The Aurora, or Northern Lights as many know them, can be enjoyed each winter here in Alaska from the Kenai Peninsula to the interior of Alaska near Chena Hot Springs (one of the Aurora hotspots in Alaska). We named our brunch collection after the Aurora because after staying up half the night oooing and ahhhing over the radiant colors as they dance across the sky, brunch around the noon hour sounds a whole lot more appealing than an early morning breakfast. The same is true in the summer we’ve found, after staying up late under the midnight sun fishing Red Salmon on the shore or leaving before first morning light in pursuit of King Salmon or Silver Salmon, our Aurora Borealis Brunch is the perfect meal to recuperate from all that fun work!
From our Finnish “Wild Blueberry Kropsua“, an oven pancake brought to American by my great grandpa Isak Mäkkinen in 1903, and the first breakfast we serve visiting friends nearly 100% of the time, to our “Swiss Röschti” loaded with Emmental cheese, or even our Japanese style “Seaweed Smoked Salmon Omelette“, we love to infuse the taste of gourmet international cuisine in every bite.
