After years of enjoy our camp favorite “Smoked Salmon Caesar Salad“, we took it up a notch one day when we had a taste for halibut and no croutons for our salad.  We decided to substitute crouton-sized, seasoned panko fried halibut pieces for the traditional crouton and voila a new culinary creation was born!

Ingredients:

Halibut
Beer Batter
Panko Bread Crumbs
Romaine Lettuce
Caesar Dressing (any favorite brand, or homemade, but we tend to prefer Cardini’s)
Fresh Grated Parmesan Cheese
Fresh Ground Black Pepper
Squeeze of Fresh Lemon

Preparation:

Prepare halibut croutons ahead of time so they have 10~15 minutes to cool slightly.  Cut the halibut into slightly large crouton shapes, dip in our beer batter, toss & roll into a 80-20 mixture of panko breadcrumbs and fresh grated parmesan cheese. Deep fry or pan fry till golden brown in extra light olive oil or peanut oil. Set aside to cool. Prepare romaine lettuce, add halibut croutons & toss with caesar dressing. Add a generous squeeze of fresh lemon (no seeds please!) and dust with fresh grated parmesan cheese and fresh ground black pepper.  Your friends will be amazed!
