Our B&B guests enjoy this delicious breakfast on the first morning of their stay with us. It’s a special family favorite from our Finnish roots, and guests who get their first taste often request it again.
Ingredients:
3 Tbsp butter (melted in baking dish)
2 Eggs
2 C milk
1 C all-purpose flour
2 Tbsp sugar
Berries, sliced bananas, sliced strawberries, etc. for filling.
Top with butter, maple syrup or powder sugar, whatever you like.
Preparation:
Preheat oven to 375 F. Melt the butter in a 9×13 inch baking dish, I prefer a glass dish. While the butter is melting, beat the eggs and milk with a wire whisk in a large mixing bowl. Add the flour, sugar and salt and mix until very smooth. Pour the batter into the sizzling hot pan, add whatever fruit you like–I love Alaskan wild blueberries, and bake for 30-40 minutes. After it turns golden brown and gets puffy in the pan, you’ll know it’s time to eat! Serve it up and eat right away. Enjoy every bite to start your day right! : )
