Whether you whip up a homemade Alfredo sauce, or use one of the many packaged sauces you find at the store (we prefer Knorr from Germany), this simple seafood preparation is always a hit with the kids, even when they are tired of fish!  It’s really nice on a cooler summer day too, or in the fall.

Ingredients:

Fresh Salmon
Fresh Halibut
Smoked Salmon
Fresh Shrimp or King Crab if available
Light Olive Oil
Fresh Garlic
Sweet onion or shallots, sliced thin or diced
Mushrooms, sliced (use morels for a gourmet flair)
White wine
Alfredo sauce, homemade or prepared
Cream
Fettucini noodles
Parmesan Cheese
Herbs

Preparation:

Boil water for Fettucini noodles, cook, and toss in olive oil, parmesan and herbs.  While pasta is cooking, heat skillet with light olive oil and saute onions, mushrooms and garlic.  Add white wine, quickly followed by fresh fish, cut in bite size portions.  Saute briefly to cook fish lightly and add alfredo sauce, bring almost to boil, and pour over pasta.  Top with parmesan cheese and let everyone serve themselves!
