Bananas Foster, or Banana Flambe to some, is a family favorite desert around here.  This breakfast variation, inspired by a restaurant in New Orleans, is fast becoming one of our guest favorites!

Ingredients:

Bananas (of course)
French or Italian Bread
Eggs
Milk
Vanilla
Butter
Brown Sugar
Banana Rum
Banana Liquour if available or Banana Essence (or simply some ripe finely mashed banana juice)
Cinnamon
Pecans or Macadamia Nuts
Vanilla Ice Cream
Whip Cream

Preparation:

Prepare the french toast part as normal, with eggs,milk, vanilla & cinnamon for the dip, and cook in a pan with oil or butter.

Melt some additional butter in a separate pan, add brown sugar to begin the carmelization, add the rum and banana liqueur, and set it afire to burn off the alcohol (makes a great Mother’s Day show too).  Add the nuts and cinnamon during the flaming process, and add the bananas last so as to not overcook them.  Immediately pour the carmelized banana mixture over the french toast on a plate (or large serving bowl) and top with a scoop of vanilla ice cream and some whip cream with a dash of cinnamon on top!  Yummmm just thinkin’ about it!
